Chef Nathan Bohning has been working in restaurants all over the mid-west and northeastern part of the United States, as well as St John in the U.S.V.I. for over fifteen years.

Educated at The French Culinary institute in New York City, he worked with a number of Michelin Star chefs including significant time at Oceania, a Michelin Star New York restaurant where he learned a love of seafood. From there, Chef Nate developed a passion for seafood inspired dishes and slowly made his way to mastering the art of sushi making.

He travelled further south on the eastern coast of the US and accepted the role as the executive chef of Kaiyo Sushi & Grill. After two years, Chef Nate wanted to expand his palate further and headed to the Caribbean where he worked with a native Chef to curate one of the islands first “island to table” concepts.

Not long after, he was known on island for creating beautiful sushi and Asian style food using Caribbean flair. Chef Nate went on to be the Executive Chef at the islands only sushi restaurant where he worked with local fishermen and local farms to create his menu.

Dining at Peacock Sky Vineyard

In addition to our cellar door and daily degustation wine tastings, Peacock Sky offers daily lunchtime dining. Our atrium restaurant area, Le Côté de la Colline, opened in 2013 and seats approximately 50 guests for lunch. Guests can also choose to dine on our outdoor terraces, surrounded by lush native bush, or in plush, comfortable seating overlooking our duck pond.

The covered dining area is perfect on a calm day, fully open with perfect shade and gentle breezes. On a windy or rainy day we pull the transparent side covers down so you can still enjoy the views without having to suffer the elements.

Along the side of our building are our beautiful outdoor terraces. A great place to relax on those balmy summer days. Our full restaurant menu is available, the setting is framed by extensive native bush, and you can enjoy great views across to the main vineyard.
